I also live in an apartment with my little family and our two dogs - whity and browny, and I really love to have a garden.  Sadly when I tried having once, I used that multi-level boxes, our dogs destroyed it.  Well, I guess it is not yet the right time for me to have a garden but soon as we'll have our own house, I am sure we'll have the best garden ever.  By the way, I still and always do recycling. :)

Plant trees around the house strategically (on the south and west sides; shading the air-conditioning unit, if possible) to save up to about $250 a year on cooling and heating.

I hear ya. My cats can destroy stuff too.
But
plant garden (eat) veggies in hanging baskets out of their reach.
Herbs Peppers Tomatoes etc.
Don't be a slave to your pets (as much as we love them)
We rule the roost; not them

You bet.  But, there are actually a lot of limitations when you live in an apartment and there's only so little things that you can do.  In here, we're not allowed to put on some hanging stuff or something that would somehow do some works on the ceiling or walls.  But anyhow, we'll sure find a way.  Thanks for the tips though. :)

One thing you could try.
Suspend a wire across the room; above your heads so you don't run into it and hang plants from there. Only two holes;
either end of the room. (Good strong wire/hooks so it doesn't collapse)

Landlords say they don't want you doing stuff (I know, I used to be one) but they also know they're going to have
to patch holes and paint once you move; that's what the security deposit is for.
